What Do We Certify?
It certifies wines produced with a philosophy of natural, low-intervention winemaking. Our focus is exclusively on the winemaking process — from grape reception at the winery to bottling. This allows you to continue your existing production while showcasing your natural wines
Core Production Requirements
To receive the certification, a wine must strictly adhere to the following:
- Fermentation: Only indigenous yeasts naturally present on the grapes may be used.
- Additives: No oenological additives allowed during winemaking (e.g., tannins, acids, enzymes, commercial yeasts).
- Permitted Exceptions:
- Inorganic nitrogen compounds (before and during fermentation)
- Pine resin (for retsina)
- Inert gases (for oxidation protection)
- Sulfur Dioxide (SO₂): Controlled use is allowed during production and bottling. Final limits:
- Red wines: max 80 mg/L
- White and rosé wines: max 100 mg/L
- Filtration: Avoided when possible. If used, only diatomaceous earth, paper, or cellulose filters (≥5μm). Prohibited methods include membrane filtration, reverse osmosis, centrifugation, and fining agents (e.g., albumin, bentonite).
